"Dining with the Saints" is one of the many events that St. Mary’s College (C.I.C) normally puts on. Now even though a vast number of TJJ members spent most of their teen years getting a secondary level education here, it sometimes is real beans trying to organize with folks for these events. But anyways let's let bygones be bygones! We on de inside, the night is young and things looking interesting.

This was not the usual party or fete that we are accustom to dropping by and checking out. No, not at all.... tonight was about a night of food, live entertainment, good people and well de drinks as always ;-) The event promised 90 cooks, 52 desserts, entertainment by H2O Phlo, WITCO Desperadoes and DJ Crosby. What more ya want??!! Now if you were about to say a complimentary bar, well doh even bother. It have that too!

Well we moving from tent to tent, and all we seeing is cuisine of all descriptions. These dishes are normally prepared and served by mostly past and present St. Mary's students. Carrying with them also were some quite innovative and unique names such as “Take Dis Beef To The Bank”, “Fish In Saintly Olives”, “Meat Con Carne”, “Plantain Pollo A La Perfect” and “Drum Poulet Et Sacred Herbs”. Well from the smiles on most folks face, looks like they all tasted as good as they sounded. After the main course, there was a variety deserts to indulge in as well. From cakes of all descriptions and toppings to ice cream, fresh fruit, and a whole lot of other delicacies that we couldn't possibly all list.

In the background we could hear de sweet sounds of steelpan being played by WITCO Desperadoes. However, with so much activities going on, we didn't get much time to sit down and enjoy performances by most of the entertainers. It was difficult just trying to balance a camera in one hand, a plate in de other, and well a drink somewhere in between those two .... all while catching up with some familiar faces, both old and current.

Quite an entertaining, enjoyable and filling night if we do say so. It's almost like St. Mary’s has a culinary course on its syllabus. We mean with so many great chefs, one has to wonder how they became such talented cooks? Or is it just another blessed God given Trini gift? Whichever it may be, compliments to the chefs!! Special thanks to Keith, Brandon and Mr. Rajah for the gracious hospitality. TJJ definitely appreciated it.

Next stop, Summer Cooler Fete ... we told ya de night was young!
